Ode to Spring with Chimes

Spring is seen as the rebirth after the cold winter months. The teasing sunshine of spring brings a new cycle of life to all living creatures. Time of renewal and change for both nature and people and a time for the Nepali New Year!
The best way to celebrate any occasion/festival is by surrounding yourself with family and friends in the midst of great food! Welcoming the New Year, it was fitting to write about a new restaurant (fairly new) that does not compromise when it comes to the quality of food.
In the heart of Sanepa, just ahead of the main Sanepa Chowk is where Chimes is located. Upon entering the property, you first come across the bed and breakfast building leading into the backyard; converted to a spacious outdoor restaurant. If you're lucky, you might even get to sit in the ‘machan' style elevated seating, from where you can view the entire restaurant. And as the name of the restaurant gives away, you get to ring the wind chime to call your server!! With the onset of the new season, they have introduced a new Spring menu. The menu has lots of different options to choose from and various combinations of flavors which you may not have tried before, for vegetarians and non-vegetarians alike. As per the spring theme, we expected our food to be fresh, vibrant and flavorful, and we were not disappointed!
For the appetizer we tried the crowd-pleasing Chicken Shu Mai dumplings and Peas and Feta croquettes.
They both were absolutely delicious. We particularly enjoyed the vegetarian dish (surprising, we know!). For the mains, we had the vegetarian Pad Thai noodles. It was a big bowl of deliciousness. Nice bold Thai flavors and not too spicy.
We were then recommended their burgers which they've been trying to perfect for months and only introduced it to their menu after they were satisfied with the outcome. We had the Chicken Burger and we’re happy that they took their time.

They have a secret recipe for their buns which makes all the difference. Tender chicken breast that melts in the mouth with mild cheddar cheese makes for a classic combination. Try it, you'll know what we’re talking about.
By the time it came to dessert, we had stuffed! However, there was cheesecake on the menu, and no one says no to cheesecake. It’s the law! They keep changing their cheesecake flavors so what we got at the time was a chocolate cheesecake. It was light and not sickly sweet with a good flavor of cocoa. A good ending to a wholesome meal. Next time, we’re getting the crème brulée too.

Chimes is a restaurant which is trying to introduce flavors from across the world to the Nepali market experimenting with various flavors and combinations. They follow the European ideology of running a restaurant where good quality food is the key element. Hygiene is very important to them and they take pride in keeping their kitchen and food clean. No one wants to eat from a dirty kitchen after all.
Overall, a great experience. They have a great selection of alcoholic and non-alcoholic beverages to go along with the food. We recommend the wines. The menu was designed by taking suggestion from customers, friends and family to create the best combination of dishes you’d expect to eat at a restaurant. If you’re looking for outdoor seating, great tasting food and quality along with great service, this is the place to go. They also have a special event for New Year’s Eve.
